Menu Plan Monday

Monday: chicken strips and mashed potatoes
Tuesday: spending the night with my mom
Wednesday: Lemon Teriyaki chicken
Thursday: pork chops, green beans, and au gratin potatoes
Friday: hopefully we can eat out

*Everything is easy this week b/c baby girl and I are sick..

Lemon Teriyaki Glazed Chicken
1/4 cup sugar 3 Tbsp brown sugar
1 Tsp. ground ginger 1/2 cup lemon juice
1/2 cup soy sauce 6 cloves garlic-pressed
8 chicken thighs

Mix dry ingredients first in a casserole dish, then add liquids, and garlic. Use a whisk to mix thoroughly. Add chicken-pierce chicken with fork, and spoon liquid over. Allow chicken to marinate for about an hour. Remove chicken from liquid-add liquid to skillet and cook over medium heat for approx. 3-4 minutes. Add chicken and simmer for 30 minutes or until tender, with a lid on the skillet. Serve over rice.

Tuesday: Bean Burritos
Wednesday: Sweet and Sour Pork
Thursday: Chicken Pot Pie or Chicken in a Cloud
Friday: Cheddar Cheese Brats and Fries

Monday: sloppy joes on sesame seed rolls and cinnamon pears with Cool Whip
Tuesday: Double cheeseburger Hamburger helper (don't normally buy, but need box tops for school)
Wednesday: pork chops and rice
Thursday: pasta shells
Friday: pizza
I am not feeling very inspired this week..my thyroid is acting up..

Breakfast: pop-tarts, fried eggs, cereal, and cereal straws
Lunch: sandwiches and whatever is leftovere for dinner for the hubs to take to work
Snacks: Hostess goodies, I possibly will make cupcakes, fruit roll-ups, yogurt drinks
Dinners: Monday- big baked potatoes with broccoli and cheese
Tuesday- leftover pork roast made into barbecue sandwiches
Wednesday- Beef Curry stew with rice
Thursday- pork chops and yellow rice
Friday- pizza!

Wednesday: Spicy Garlic Chicken-out of a box mix the new ones
Thursday: chicken rollups, salad
Friday: pizza or stromboli

Snacks: 100 calorie carrot cake, pudding, string cheese, 100 calorie pretzel things, tortilla chips and cheese dip..last night I made nachos with chips, refried beans, and cheese dip..

New to Blogger

I followed Ginger's lead and decided to join blogger as well as my facebook and myspace..
I just married a down south boy last July and in January we moved to his hometown of Grenada for me to pursue my insurance career further..I am still adjusting to the small town life again..I am happy to report that I took a job with Allstate..However, I will be in training for 6 weeks..out of town..Kylie is not gonna be very happy about this I'm afraid..I feel sure that massive spoilage from grandmothers will ease the pain..
